Serrano peppers are left on the vine to mature until they turn scarlet red. They are then picked and slowly smoked until the flavors blossom. Smoked Serrano chilies have a spicy, lingering flavor with subtle notes of berry. Mixed with sea salt it can be used to make authentic spicy sauces.
