Our Country Cured Heritage Breed Pork Bacon is made from purebred pasture raised heritage breed pork (while you cannot choose which you get, it is either Duroc or Berkshire). The flavoring of the meat itself is distinctly different from the pork you buy at the grocery store, generally with a creamier mouth feel and texture.
We make our Country Cured Heritage Breed Pork Bacon the same way your great grandfather made it back in the day! We cure it with just two ingredients: salt and maple sugar. Our regular bacon takes 4-5 weeks to make, while this bacon takes us 6 weeks to make. In the curing process, the salt and maple sugar help draw out the strong bacon flavor of the meat, paired with the delicious smokiness that comes from the 48 hours of hardwood cold smoke we use to finish the curing process.
